In 2005, after years in renowned Chicago kitchens like Charlie Trotter’s, Ambria, Marché, and MK, Mindy Segal opened HotChocolate, which became a beloved neighborhood restaurant over its 15-year run. A five-time James Beard nominee and the 2012 “Outstanding Pastry Chef,” she published the bestselling Cookie Love in 2015 and appeared widely in national media. In 2016, she partnered with Cresco Labs to launch a pioneering line of cannabis-infused sweets, and in 2018 the City of Chicago declared February 26 “Mindy Segal Day.” Following HotChocolate’s closure during the 2020 pandemic, Segal returned to her baking roots through weekend pop-ups and, in 2022, opened Mindy’s Bakery in Wicker Park, where she continues her craft alongside Executive Pastry Chef Bo Durham.
